Chemex.
Form your Chemex filter into a cone with 3 layers set to one side.
Place the filter in your brewer with the layered side facing the spout.
Wet/rinse with hot water, then discard the rinse water.
Grind 40g of coffee medium-coarse.
Place the coffee grounds in your filter. Level the grounds by tapping the side of Chemex.
Place your Chemex brewer on a scale, tare to 0.
Start Timer
Pour 80g of water into the center of the ground coffee.
At 0:30 Pour 200g of water starting in the center of the grounds, circling outward, then inward. Be sure to keep from pouring water onto the edge of the cone.
This can dilute your brew by bypassing your coffee grounds. Total weight will be 280g
At 1:30 Pour 170g more just as before. Total weight will be 450g
At 2:30 Pour 150g again, one last time. Total ending weight will be 600g
4:00-5:00 END It should be finished before 5 minutes.
Serve coffee once filter stops dripping. If it went longer, try a more coarse grind next time. Did your brew end after 5:00? Try a coarser grind. If it ended earlier than 4 minutes then try a finer grind.

Cold Brew.

INGREDIENTS
There are some pretty cool systems to make cold brew and you can even do it in a big ole' food storage container with some cheesecloth if that suits you. We use the Toddy™ and it works great for us. Fair warning - it is a bugger to clean up after cold brew regardless of your system.
Ingredients:
12oz (340g) of your favorite freshly coarse ground coffee
7 cups (1.65L) filtered water
Half and Half (to your liking-or skip)
Sweetened condensed milk (as you like....2-3tbsp or skip)
DIRECTIONS:
Set up the Toddy™. Place the small cork-like stopper in the outside bottom of the Toddy™. Saturate the 2" circular filter and place it in the bottom of the container.
Pour 1 cup of water into the Toddy™. Add 6 ounces of coffee. Slowly pour 3 more cups of water over the grounds in a circular motion, saturating all the grounds. Wait 5 minutes.
Add the remaining 6 ounces of coffee. Slowly pour in the remaining 3 cups of water, again saturating the grounds. DO NOT stir, as this may clog the filter. Using the back of a spoon, gently ensure that all the grounds are wet, and then flatten the coffee.
Leave the coffee to steep, undisturbed, for 12-24 hours, depending on how you like it. Start with 12 hours and experiment from there.
Carefully place the brewing container onto the glass decanter. Remove the cork. Allow the coffee to flow into the glass decanter. This will take several minutes. DO NOT stir the coffee, as this may clog the filter.
Prepare your cup! You have made a cold brew concentrate. We recommend making each cup of iced coffee by combining 1 part coffee concentrate with 1 part water and pouring directly over ice. Mix the coffee how you like it, adding half & half or soy, a little sweetened condensed milk (if you are looking for a sweet treat), stir, and enjoy!
Store the concentrate in its decanter in the fridge as is. You can drizzle a little of your flavored syrups of creamers too if that's your thing. You can even stir in the concentrate with steaming hot water for a gentle and flavorful cup of hot coffee.
